Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 stick of cold unsalted butter, cut into small pieces
  • 1/2 cup cold buttermilk
  • 1/4 cup club soda (optional, can be replaced with additional buttermilk or milk)
  •  2 eggs (one egg is for brushing the top)
  • 3 tablespoons buttermilk
  • melted butter (for brushing the top of each biscuit)

Instructions:

  1. Preheat the oven to 450°F (232°C), a super hot oven ensures a rapid billow of the dough for the best results.
  2. Prepare your dry ingredients: In a large bowl, whisk together the flour mixture (flour, baking powder, baking soda, and salt). If you prefer slightly sweeter biscuits, add 1 tablespoon of sugar (optional).
  3. Cut in the cold butter: Use a pastry cutter, pastry blender, or even a potato masher to mix in the large chunks of butter until you get pea-sized pieces.
  4. Combine the wet ingredients: In a medium bowl, mix the sour cream (or yogurt or omit), buttermilk, club soda (if using), and egg.
  5. Mix the dough: Pour the wet ingredients into the dry mixture and stir until a sticky dough forms. Avoid overmixing or a tight dough, or you’ll end up with flat, rock hard biscuits.
  6. Cover the bowl with plastic wrap and refrigerate for 30 minutes or overnight
  7. Shape the dough: Transfer the dough to a floured surface, sprinkle a bit of flour, and gently knead a couple of times.
  8. Roll and cut biscuits: Pat or roll out the dough to about 1/2 or 3/4-inch thickness and use a two inch biscuit cutter to cut biscuits. These are your biscuits!  Make them as large or small as you would like! Do not twist your cutter.  We want our biscuit edges to to rise!
  9. Prepare for baking: Place the biscuits on a prepared baking sheet lined with parchment paper or aluminum foil. Your biscuits should touch so that they can help each other rise! We want a loftier finished biscuit!
  10. Bake in the super hot oven for 12-15 minutes or until light brown to get perfect buttermilk biscuits.
  11. Brush with butter: Once out of the oven, immediately brush with melted butter for flaky layers and extra flavor.

Tips for Easy Popeyes Style Homemade Buttermilk Biscuits

  • Cold ingredients are key! Keep your butter, sour cream (if using), and buttermilk cold for loftier finished biscuits.
  • The temperature of the dough matters—don’t let it get too warm.
  • Avoid overmixing the biscuit dough, or you’ll have flat biscuits instead of those great biscuits with flaky texture.
  • If you don’t have a pastry cutter, a potato masher works well to break the butter into the biscuit mix.
  • Want extra biscuits for later? Store them in an airtight container or a freezer-safe container.
  • Reheat in the air fryer or oven for that fresh, warm taste.
  • You can use regular milk with 1/2 tablespoon vinegar if you do not have buttermilk
  • You can add 1/4 cup sour cream or substitute with plain yogurt or omit entirely
