- 6 cups of minced red orange, and green bell peppers (a mix of sweet peppers-I do not use that much green pepper)
- 4-6 habanero peppers minced (Wear gloves! You will thank yourself later!)
- 1 cup apple cider vinegar
- 1 cup orange juice for added sweetness
- 4 cups sugar you can experiment with less sugar for a milder jelly
- 1 box of powdered pectin or Certo brand liquid pectin
- 1/4 cup lemon juice
- 1/4 tsp red pepper flakes optional, for extra heat
- Sterile jars half pint jars work best
Instructions
- DirectionsBegin by preparing your peppers. Use a food processor or Vidalia chopper to finely mince the habanero peppers, bell peppers, and jalapeno peppers. This step ensures that the final product has a good consistency.In a large saucepan, combine the minced peppers, apple cider vinegar, orange juice, lemon juice, and sugar. Stir the mixture over medium heat until the sugar dissolves completely.Once the sugar dissolves, bring the jelly mixture to a full rolling boil. Stir the entire time to avoid burning.Add the pectin. I’ve used both Certo brand liquid pectin and powdered pectin over the years, and both give good results. Bring the mixture to a full boil again, checking the temperature with a candy thermometer. This helps ensure the jelly reaches the correct final consistency.Meanwhile, prepare your canning jars.
