  • 4  boneless, skinless chicken breasts
  • 2 cups slice portabello mushrooms

  • salt and pepper to taste
  • 1/2 cup any high heat oil ex. sunflower, peanut oil, safflower oil
  • 1 cup shredded cheddar cheese
  • 4 slices Monterey Jack cheese
  • 1/4 cup sour cream
  • 2 tbl olive oil
  • 2 cloves garlic minced
  • 1/2 tsp white pepper
  • 1 cup water
  • 1/4 cup lemon juice
  • Fresh parsley for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a baking tray or casserole dish.
  • In a large skillet over medium-high heat, add the high heat oil and let it heat up.
  • In a shallow bowl, combine the flour, garlic powder, salt, and pepper. Mix well.
  • Dip each chicken breast into the flour mixture, coating it evenly on both sides.
  • Carefully place the chicken breasts in the hot skillet. Then cook for about 2-3 minutes on each side or until golden brown. Remove from the skillet and transfer to the prepared baking tray.
