Honestly, I never knew how quick, easy and delicious quiche was until recently! Yes, I am ashamed to admit.

It really is a classic quiche Lorraine. This recipe is a great option as a perfect make-ahead meal or for special occasions like mother’s day or baby showers.

You can use this recipe and swap out the ingredients for something that your family loves. Just substitute spinach & mushroom for the caramelized onions and bacon in this savory tart.

You could even leave out the mushrooms for a spinach quiche and use Swiss cheese with different fresh herbs. My family loves a good bacon quiche! So I tend to go heavy on the bacon in my favorite quiche recipes.

This recipe can also be adjusted and made as a vegetarian dish. You could make a zucchini quiche, an asparagus quiche, a chopped spinach or fresh spinach and feta cheese quiche, a broccoli quiche even a butternut squash quiche!

The list could go on and on! The key to all of the varieties is to make sure you cook the veggies before adding them to the quiche.

You can also use all types of cheeses. Cheddar quiche and goat cheese quiche are delicious with red bell pepper.

If you use Parmesan cheeses, remember that these cheeses can be a bit salty. You may not need to add any additional salt!

  • 1/2 large onion, peeled and thinly sliced
  • 4-5 slices bacon, chopped into bite sized pieces
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 1/8 tsp salt 
  • 1/8 tsp ground nutmeg
  • Black pepper to taste
  • 1 Tbl fresh parsley chopped
  • One 9″ tart pan lined with pie crust, partially blind baked

Preheat the oven temperature to 375°F.

In a large frying pan over medium heat or medium high heat, cook the bacon until you see bacon fat in the pan. When you notice that the bacon fat has rendered a bit, add the onion.

Cook until the onions are soft and the bacon is crispy (or however your family loves it). Take the pan off of the heat and let the crispy bacon and onions cool.

In a medium sized bowl, whisk the cream, eggs, milk, salt, nutmeg, parsley and pepper. Push the bowl to the side, you will come back to these ingredients in a moment.

Evenly place the sauteed onion and bacon mixture and the cheese over the par-baked crust. Now grab the bowl with your quiche filling liquid ingredients and gently pour the custard filling on top.

Bake for about 25 minutes or until crust is golden brown (or the color that you would like) and the filling jiggles just slightly in the center.

Let the quiche cool, then slice and serve with a fruit salad, sweet potatoes or a green salad with bell peppers.

This quiche can be stored covered with aluminum foil or a zip-top freezer bag in the refrigerator for up to three days. I do not recommend freezing. I have frozen a quiche before but I did not like the texture when I reheated.

You can absolutely use store-bought pie crust or puff pastry from the grocery store. I like to make my own homemade pie crust. You can find my 3 ingredient pie crust on my blog.

Flaky Crust

Your quiche crust will have a flaky crust if you use this recipe. A homemade premade pie crust is your friend. You can freeze the crust and pull it out when you are ready to make an easy quiche recipe! You can also use this crust recipe to make sweet or savory pies.

If you want to go low carb, you can also make a crustless quiche or use this recipe to make mini quiches. The mini quiche recipe has the exact same savory filling as the main ingredient.

If you are making a crustless quiche, use a pie plate instead of a pie tart and coat the pan with a tablespoon of olive oil. For the minis, just fill the mini tarts and bake on a rimmed baking sheet.
